Have my hood all marked out and ready to cut.
Any suggestions on how to cut it without warping. It would be a real bummer to have to start over again.

probably typical jig saw or reciprocating saw. Maybe one of those cutting wheels. A torch or plasma might warp, but I've never used or seen one used in person before. I'd go with a saw and then grind the edges to smooth them out.

I use a cutoff wheel...
